Did you know today is National Simplicity Day? I’m a sucker for those National Day calendars that share all of the oddball holidays because I live for any reason to celebrate. So in an effort to keep it simple – let’s get right to the best finds of the week. I’m still swooning over the kitchen goals at the end!
This little lump of goodness is more than what meets the eye. Apparently our house has gone on some sort of cereal strike, and I wasn’t about to let the (organic, gluten free) Koala Crisp we had bought for Grey go to waste. I also was craving something with the perfect amount of salty & sweet, and crunchy bites of deliciousness that wouldn’t totally blow the workout I had done in the wee hours of the morning. They check all of those boxes, and were a huge hit with the whole family. Here’s how to whip them up:
- 3 cups of Koala Crisp Chocolate Rice Cereal
- 1/2 cup of your nut butter of choice (I used NuttZo which if you haven’t tried it, is unbelievable – a Costco find)
- 1/2 cup chocolate chips
- 1/4 cup organic coconut oil
- handful of vegan mini marshmallows (optional!)
Melt the nut butter, chocolate chips and coconut oil in the microwave until smooth (2 turns of 30 seconds each should do it), then stir in the cereal and marshmallows. Spoon lumps onto a parchment-lined cookie sheet, top with a sprinkle of sea salt, and refrigerate. They should be ready to eat in about an hour and you can store them in the fridge until they’re gone!
Crawling out from under my rock, I have to be honest with you and tell you that I had very little clue who Zac Efron was before this show. So what drew me in was not one of the hosts (I love that the other one is a wellness guru btw!), but the severe case of travel lust I have right now. It gives me just a little bit of Restaurants on the Edge vibes (which is a must watch if you haven’t binged it yet), and now Iceland has risen to number 2 on my bucket list.
Positive affirmations repeated daily can have a long-term impact on the way we think and feel. These are five that we’re hyper-focused on this week. I say them in my mind when I first wake up in the morning, again when I’m getting ready for the day, and pull out the screenshot for whenever I feel like I’m getting off track. I set a goal of two library books per week and so far I’ve been on top of it! This week’s favorite was The Companions by Katie M. Flynn. Although I wish it was formatted differently, I really loved the plot (how did she know a pandemic was on the horizon?!). It was freaky, in a good way, and was a different genre than what’s been on my nightstand lately. 8/10!
I went down a rabbit hole of house tours in London. It was glorious, and oh so glam.

Our Dyson Animal finally quit, and we spent longer than I care to admit researching a new vacuum. With three large dogs and a tiny human, a suction powerhouse is a must. We’re the proud new owners of this beast, and I have to say, I like it much better than the (more expensive) predecessor. 5 stars!
